• A model considering strain rate sensitivity was established to simulate tissue dynamic response and mechanical damage. • Dynamic compression causes rate-dependent mechanical damage in strawberries. • Central pith resists external stress and prevents complete penetration. • FEM simulations reveal stress propagates inward faster at higher rates. • Microstructure and LF-NMR revealed coupled damage mechanisms of compression distance and rate.
