• SFJ has a yellow color as indicated by L⁎=68.13, a⁎=2.46, and b⁎=39.51 values. • Compact MGA morphology (smooth and crack-free) enhances shelf-life of SFJ powder. • Spray-dried SFJ powders exhibited dual monolayer–multilayer adsorption mechanisms. • Optimal storage identified via (ΔSint)T zone: aW 0.19-0.52 (GA) and 0.15–0.32 (MD). • MGA showed superior color protection with k values of 0.11–0.33 weeks-1.
