• Protein charge at different pH values resulted in different protein separation efficiencies • RBP 9.5 showed the highest protein separation, whereas pH 2 showed the lowest. • The positive electrode exhibited linear separation, non-linear at the negative electrode • Proteins with higher absolute ζ-potential showed smaller particle sizes • RBP 9.5 + showed higher solubility and oil-holding; however, lower hydrophobicity
