• Ultrasonic-assisted pH-shifting (UP) treatment promotes the glycosylation reaction of SP. • UP treatment and FG conjugation enhance the solubility (53.7%) and the emulsifying capacity of SP. • Emulsion gels formed by UP-SP/FG conjugates showed smaller and more uniform droplets. • Emulsion gels stabilized by UP-SP/FG conjugates exhibit higher oxidation stability.
