• The optimal mass ratio for the covalent cross-linking between CAS and AX was screened out to be 2:2. • The enhanced structural flexibility of CAS facilitated the formation of covalent binding with AX. • The conjugate with an ultrasonic pretreatment power of 400 W exhibited the optimal functional performance. • The HIPEs with an oil phase volume fraction of 80 % exhibited the best stability. • The HIPEs stabilized by the conjugate exhibited the highest encapsulation efficiency for curcumin.
