Abstract

Abstract

Fruit peel represents a significant bio-waste devoid of commercial value yet, possesses potential for industrial applications. Numerous methodologies have been previously utilized for the removal of Soluble Dietary Fibre (SDF) from an array of fruit rinds. Nonetheless, a justifiable extraction technique yielding substantial SDF remains to be elucidated. Consequently, the current investigation sought to develop a novel extraction procedure incorporating chemo-mechanical and thermal treatments applied to three distinct varieties of Indian Pomegranate namely Bhagwa var. Ganesh var. and Phule Arakta var. of peel. Among them, Bhagwa var. demonstrated the highest SDF yield of 50.21 ± 0.38% through a modified protocol that integrated chemical (6% vinegar and 0.1 N sodium hydroxide),and mechanical (Pulse-ultrasound assisted extraction at 150 W for 20 min. and High hydrostatic pressure at 400 MPa), and thermal (autoclaving at 121 °C for 15 min.) collective processes. The Analytical and spectroscopic characterization of the treated samples revealed significant structural variations in conjunction with improved TPC and antioxidant potential. Hence, this research underscores the promise of a sustainable green innovative extraction technique for the conversion of unused into a value-added functional food constituent.
