• A mild method for synthesizing protein-protein nanoparticles was developed. • PPI–gliadin nanoparticles exposing gliadin showed superior foaming properties. • The foaming properties of nanoparticles surpassed those of sodium caseinate. • Diffusion rate and interfacial deformation are key to nanoparticle foam properties.
