• A thermal-reversible gel was prepared from peanut proteins and ethanol. • Ethanol enables gel formation at lower protein concentrations. • Thermo-reversibility persisted over 5 heating-cooling cycles. • Hydrogen bonding drives reversible physical crosslinking.
